they don't 'have' to...  Noise (these days... in fact even in THOSE days...) is
more a function of good design and layout that signal level.

Not necessarily...  You might have a zipper noise issue with some
digipots if you only have 64 or 128 steps...

You could do the whole thing in HARDWARE if you wanted to. It would
be complex. It would probably be surface mount only. You could use an FPGA
to do all the logic.  There need be NO software at all.  There are some digipots
that use an up/down signal. Presumably you might touch a switch to select function

and use the up/down keys to set it...

otoh then it would be very similar to a VA synth...   ;^P
