Typically the part with the shaft is called a pot or potentiometer. The
plastic part that you attach to the shaft of the pot is called the knob.

1/8 inch hole knobs are pretty standard so are 1/4 inch hole knobs. If you
get the 1/8 inch shaft pots all electronics has a decent assortment of
actual knobs.

Is there a standard size for the shaft of a knob?  I have an opportunity
to get some very cheap knobs, with an 1/8" shaft, but I don't know
enough to determine whether they'll work with the project I plan on
using them on... (doing a MidiBox to learn about that sort of thing)

Also, semi-unrelated... anyone know if MidiBox works with rotary
encoders?  (I know they have a forum, but figured I'd tag it on here anyway)
