A lot of gadgets use the 8051 processors.
You might have a look at the Doepfer DIY book (can't remember the exact title),
the
projects use 8051 processors...

There are lots of compilers (PLM, C, Pascal, Basic,...) and assemblers,
simulators
(high and low level, realtime systems, emulators,...
