If this were a commercial product, the serial solution would be the
*only* one, given the connector and cable prices, of course.

But even soldering a cable myself would be faster than building the
shift register stuff and all.

But then again, the serial solution might give an almost-free arpeggiator:
Encoding and decoding would be very fast in normal operation.
In arpeggio operation, the decoding would be paused until the next
arpeggio clock (LFO) for each "1" in the receiving shift register ...

(Just dreaming. If I want a second serial input, I just use a Midi Merger.)
