I think it's a good idea, except:
$100 for electronic parts +
$100 for decent pots, switches & jacks +
$200 for a custom made enclosure +
$ 50 (just as a guess) for your PCB =
$450 already for *parts*.
I think that's more than a Frostwave FAT Controller costs.
Not to discourage you - I would be the first to buy one if it really
were just a little over 100 dollars! - but I think you underestimate
the total costs. Unless you'd really go professional, build
hundreds of them, and thus find a decent solution for unexpensive
mechanical harware ...
