Hi,

The best language for composing in my opinion off all I have tried (many) is
Lisp.
CommonMusic (CM) is it's more refined form.
>From CM you can control Csound, wich is the most efficient non-real-time
library for synthesis and processing. So my first recomendation is to
control csound from CM.
The most sophisticated language for real-time is Max/MSP. You can do both
composing and synth/proc from there. And now you can also have Csound as an
MSP object; so you can work in real-time and ask csound to work out-of-r-t
and return the resulting sound.
Another amazing software is SuperCollider. It is very efficient but not so
"kind" to use.
CommonMusic (CCRMA), Csound (MIT) and Max/MSP (Cycling74) can run on both
Mac and PC (I believe. I use a Mac anyhow) SuperCollider I think is only for
Mac.
I forgot about a great composition tool! It's name is BolProcessor (BP2),
for Mac. An ethnomusicologist began it's developing time ago. It's Lisp
based and can generate csound note-lists.
I think Csound is the most powerful, more if you generate the note-lists
(.sco) at CommonMusic.
If you believe in real-time then try Max/MSP, and also csound inside MSP.
Learn csound separately first.
I've been composing with this tools on NeXT and Mac for many years, after
using analog modular synths. Now I'm (trying) to build analog circuits again
in order to have the computer off and feel I'm playing with electrons, it's
more relaxing for me than a screen-based abstractions box.
