I think the best starting point would be either a kit or at least a book
which describes the functionality.
As kit I would suggest the FatMan.
As book I suggest always the instructions for the Formant, published in the
seventies by the german/dutch magazine "elektor". I am not sure whether
there is also an english version of this book.
If you are looking for schematics of single modules, a possible starting
point might be EFM, the company of Tom G.:

It might be also very instructive for you to see schematics of industrial
synths. A lot of them can be found at http://www.synthdiy.com/
