There's lots of plcaes to start and lots of schematics online.

First questions would have to be ;-

1) How much soldering have you done?
2) Have you built anything from a schematic before?
3) What do you hope to accomplish? I mean a complete 'stand alone' synth or
a modular synth?

I would recomend something like the oakley equinoxe phaser, this would be a
good crossover from guitar to synths, you could use it for your guitar (with
a DI box) and then later use it for your synths.
You have to buy the PCB from Tony and he'll let you have the password for
the schematics.
