The small ones you have are probably 1/4 watt resistors, the bigger ones
(1/2 watt, 1 watt) can dissipate more power.  You could use a large resistor
in place of a small resistor of the same value.  I've never seen anything
bigger than a 1/4 watt resistor being used in a synth circuit, but so far as
I know it shouldn't hurt.
If you have an old pile of resistors, you should make sure they are at least
5% resistors. :)
