I usually like about an octave for PB... but having a little more range
isn't a bad idea. 2 oct would be about the most I'd ever use personally.
I know the Paia MIDI-CV has a ridiculous (unusable) range... a 10V swing or
something like that... it's basically useless without an attenuator (a tiny
movement of the PB lever makes a 2 or 3 octave bend... too hard to control)
