I've got a digital chorus/flanger pedal for sale on eBay right now that has
stereo outputs.

With the chorus especially I've noticed a much more pronounced effect when
running in stereo versus mono.  Since both chorus and flanging work by mixing a
delayed signal with the original, it can be done monophonically.  But letting
your ears do the mixing (by outputting the straight signal in one channel and
the delayed signal in the other) gives a much more "spatial" sound - since the
ear locates objects by interpreting the time delays between the sound reaching
both ears.
Most of these effects have a designated "mono" output. My guess is when you
plug into this output, the straight and delayed signals are mixed
electronically.
