I've had the same idea a while back, but it never got anywhere due to 
lack of time. Still, I selected the part already: AD75019 16x16 analog 
crosspoint switch matrix. I also designed a two layer board with the 
Eagle freeware version for a 32x32 matrix made out of four IC (hence 
the board is 100x80mm which is what this version is restricted to). 
This was more an exercise to understand if I want to buy any of the 
other Eagle versions, not a complete project. What's crucially missing 
is the control board that loads the data for the switches, presumably 
acting upon commands from MIDI and IO buffering. Depending on whether 
you want to mix or distribute the signals you'd use different IO 
boards. If there's interest, I can put up the Eagle project on the web.
