If your sound card loads msdos compatibility drivers, you should be able to
exit entirely from Windows and use a DOS command line recorder.  In fact
one may have come with your sound card.

I'm willing to bet your computer is chock fulla ISA slots, a quick trip
to a surplus shop should yield a half dozen sound cards to choose from.
Pick a Soundblaster 16 of most any denomination and those all came with
msdos drivers and a dos based sound recorder.  Well, get one thats at least
a foot long to be certain, some of the newer ones had spotty DOS support.
3.
If you have to do it under windows, turn off windows virtual memory.  Make
certain nothing else is running, a weird one is make certain no parallel
printer is plugged in, X86 interupts can be a pain.  I never recorded
REAL long things under windows, but I would record 5 or 10 minutes without
hiccups on a 486-33.
