Crosstalk, on/off resistance and distortion are the main things. Crosstalk is probably the worst problem. It's possible resistance could also be a problem depending on what you are switching (typical ON is 80R for a cheap switch, but could be up to 200R or so; OFF resistance is normally high enough even for cheap switches). Also, check the voltage range is enough for what you need.
It might be worth trying it first with something like a CD4053 (very cheap) and seeing what results you get - might not be too bad.
