one way to prevent designs from being stolen/copied is to
make them BIG ;)
I really enjoy viewing your schematics Jim.

as for DMA for multiple S&Hs, I made something remotely similar.
There's small RAM (6116) with counters, that writes the DAC
and controlls S&H's MUX. Whenever CV is to be changed,
processor writes to this RAM, so it only cares about changes,
leaving the hardwork for the hardware (as "hardw-" prefix
would suggest).

now, the truth is, the PCBs were only made and I didn't find
the time to solder them in 4 years :-P
