Yet another dumb question (not that the first was dumb-- I had no idea!)...  If there aren't any thru-holes, then how does one get the component to stay in place while soldering?

Dumb answer: with solder and a soldering iron.

Longer answer: I have soldered far too many PCBs with SMT parts 
including 0604s and 100pin SQFPs (0.5mm pitch).  The tricks are to 
use really fine solder and a very fine soldering iron, and often a 
lot of flux.  0805s and bigger are actually easier and quicker to 
deal with than through-hole components.  You don't have to bend or 
trim the leads, and you never have to learn the resistor color code.
