For a voltage controlled polarity/gain adjust, I have been using
AD633's...however, this is one awful expensive way to do this (in singles,
they cost about $10). You can also make a fairly decent four quadrant
multiplier out of a CA3280. For a non voltage controlled aproach, you can
just use a pot, an opamp, and a few resistors to do this...dang if I can
remember where a good circuit diagram is.
