I just designed a sub-octave generator using a D-Type flip-flip, 2 
inverters, and a comparator, so I am very familiar with the little 
things right now... Anyways, a good way to make a momentary switch 
into a latching kind is to first debounce the switch anyway you 
wish, then use a D flip-flop with R and S grounded, D and notQ 
connected, switch input at C, and the output can be found at Q, 
which would need to be buffered, probly... This is how you would 
make it switch between Ground and +5Vish, so if yer working with 
analog signals, you could just get a 4066 and use that as the 
switch with the output of the above f/f circuit at the state-
change pin of the 4066 switch used... THere are also a million 
other ways to do this, but it's how I would do it...
