If they are piezo that might be really tough. By nature, Piezos are
capacitive and their output is basically the derivative of the force
applied... so they are by nature momentary devices.

You might trick one out by running into a very high impedance and letting
the self-capacitance of the switch hold the voltage until you release it and
let
it return to normal position.

OTOH I'm blowing it out my @ss having no direct experience with the
particular piezo switch you are using  ;^P
