also, you could use an FPGA...

Go with an FPGA, Ive seen some REALLY scary stuff done with these babies...
(we have some people working with the virtexII , million gates +, FPGAs at
work, and what they can get them to do is frightending)
That said you can get some good starter kits for a $100US and there is
plenty of details out there on them.
