I may do that, but there would be no point if I could just adjust the knobs to values that would make the poly 800 behave as though it were unmodified.

doesn't really do anything but move a trimmer pot from the inside to the outside, I could just set it to around the default level and the poly 800 would sound "normal"
with the slayer mod, I'm wondering if there will be no way to get the poly 800 to sound like it used to.
Use DPDT switches on the Res and Cutoff. Then you can turn the mods on and off easily.
