You will get many answers to this question.
If you are fresh to building things, maybe you would enjoy a kit like
Paia's Fatman. (http://www.paia.com)
You migth take a peek at Gene Stopp's ASM-1:

The ASM-1 contains more or less the basic modules you want. Some would
argue that you'd like a different filter, some would argue that you
want other waveforms in the oscillators etc. There are many ways to
flog a cat, but I think it will give you an idea.
Then, if you want you can go with the modular kits available from
places like Oakley (Tony Allgood), Synthesis Technology MOTM (Paul
Schreiber with friends) and EFM (Tom G).
I think you should look at the ASM-1 for the overview of modules for a
more basic thing, and then look at what other things are available and
consider what you like to have.
I can't really speak for anything else than the ASM-1, since that is
what I have (I just *happends* to have the ASM-1 homepage too, but
that is beside the point) but I know that the Oakley and MOTM stuff is
highly regarded. The EFM stuff seems popular, but I can't recall
peoples reaction to them.
You migth also enjoy a visit to Jürgen Haibles (also known as JH here)
