Interesting that the question should've been posed, cos today I found a device in a skip that allows an analogue telephone to be connected to a digital network by doing A/D conversions... Not that I have the first idea of how to use it.  

But it is a good idea... I believe that Richard James (Aphex Twin) built his own sampler with very variable sampling rates.
