That's exactly what my cheap CMOS Theremin does.. To bad I forgot 
where I downloaded the schemantic from. Does anyone remember a 
theremin schemantic built around a hex-inverter and a CMOS-PLL?

It was really easy to build.. and it sounds great when running 
through guitar-effects. Especially because the circuit was not 
shielded, and it picked up signals from out of space.. 

It never had the classic theremin sound, but maybe it's the thing
you're looking for..
