Expense has come to mind, to keep it small keeps it expensive[1].
I lucked out and found a bunch of RCA 6112s.  Not enough to do more then
play with a couple stages, but I'm still fascinated with the idea of
seeing it work.

On a related note, I found a schematic for an old tube opamp which
is I think one of the first packaged opamps made.

Even if a full tube BBD is a ludicrous idea, I dont think tube VCAs
are a bad idea at all[2].  I wish I had more experience with the extremely
low voltage tubes.  My tube experience mostly comes from my collecting
of WWII radios and 50s/60s guitar amps.  For some reason the real deals
always need some work...

[1] Ok. To build it the size of a house would also make it expensive.
tubes just arnt cheap anymore unless you get real lucky.
[2] I know Metasonix is doing some *really* cool tube synth stuff, but
whats the fun in just unwrapping and plugging something in?!?  I mean, I 
might have time to do music and the world isnt ready for that!
