Yes,sure, nice idea.
The only diff would be the shape of the keycaps :) the wiring between the
keys would a bit cranky but doable.

Small limitation though, the keyboard would be monophonic.
The mode to read multiple keys from the keyboard won't help much to get
polyphony but you could use to get a keyboard split, but both zones will be
monophonic again.

Hooking up a keyboard over the serial interface (midi) or on the C64
expansion port (parallel) might be easier and give you polyphonic play.
Even when a mono keyboard is all you need, using the other interfaces might
give easier wiring of the keyboard keys.
As a bonus you could still use the C64 keyboard for patch selection and
stuff.
