two things you could do,

1) include a lookuptable in your micro program and use a 14bit DAC this
should give you plenty of resolution
2) do what the kenton retrofits do, and attach it to the keyboard matrix
output...

In theory you could take an AVR (them again) and fit the whole thing onto
one chip..
