Another thing to mention: 
the clocked S&H sound gives infinite resolution in the vertical
axis of a scope (the amplitude) but a fixed (read: related to the
clock rate) step length in the time domain.

My AD/DA converter has fixed levels in the amplitude (16 or 8
levels), but infinite time resolution (steps on the scope have
only 16 height levels, but different lengths.)

This sounds entirely different.
