Not a straightforward question to answer. For modern synthesizers, the
most important chip is the digital signal processor. For analog
polyphonics, the most important chip is still probably the microprocessor.
(Although I might argue the most important chip is the program ROM,
without which nothing runs. ;)
For pure analog:
First-place: the op-amp, starting with the 741. Second-place,
the analog switch: CD4016/66, CD4051, DG308A, etc.
