No rules here, usually 1V is a A or a C, but there are no standards.
Just tune knobs on the VCOs ;)

mmm , not really, but how close is good enough?
You might be satisfied with how it is now.
To improve the number of steps per note you could use a voltage divider so
the full-scale output of the DAC (5V)
results in a 2V CV voltage. Or lower the reference voltage for the DAC,
gives the same result.
