As for relatively complete chips, the crystal semiconductor would be the 
easiest of routes; perhaps the best trade-off for flexibility and 
programmability is to be found in one of the Analog Devices development kits 
for thier SHARC series.  There's a small community of people who take these 
kits, hook them up to a PDA and program wicked synths on them, downloading 
everything to flash.  check out
