Or..would it be possible to use only one 555 for the various pitches 
and only one other 555 for the gate one-shot, but have different pots 
to control each step?  Isn't there some sort of multi-throw solid 
state relay or something I could use for that...

...so in the part of the 555 circuit where the pot would be to set 
the pitch, there would be 8 pots in parallel, and a chip switching 
which one was actually in the circuit.  Does that make sense?
