I'd like to build a "simple" pitch quantizer.

'Been listening to a lot of Christina Aguilera lately?

(In related news, MTV has had this Andy Dick video in heavy rotation
lately where he plays the part of Christina Aguilera's cousin. And
true to the satire, the pitch correction is really cranked. It's very
funny if you listen for it.)

I've seen oblique references to analog circuitry to do pitch
quantization (I'm talking about traditional chromatic scales), but
been unable to find a detailed description, or circuits. Any tips?

I don't know of any. It's a very difficult problem in the analog
domain. Perhaps you saw a reference to voltage quantization applied
to control voltages for VCOs.
