While I'd probably go the #3 route myself (being a microcontroller &
assembly language kinda guy), there are several apreggiators on the
market...we've heard about the Akai, Oberheim and MAM.  

One that didn't get mentioned is the Kurzweil Expressionmate.

It's got the requisite black box, and will do some pretty crazy
arpeggiation...you can set your durations & step times, and there are
actually 3 arpeggiators in there, which can be cascaded for some long repeat
times.

It'll also do a whole bunch of continuous controller mapping, into CCs or
Sysex.  It includes a large ribbon controller, plus connections for
expression pedals, breath controller, etc.

One of the few arpeggiators out there that's still available new.  It was
recently discontinued, but there are still a lot of unsold units around.  I
think Interstate Music was blowing them out...or maybe Sam Ash?
