It's a few days ago since you asked, so maybe you found out yourself by
now. In short, there are several parameters involved. The Modulation
Wheel Range/Pitch/Amplitude/EG Bias parameters are so-called function
parameters, these are global to the whole DX7. Then there are the Voice
parameters (i.e. individual for each voice) Amplitude Modulation
Sensitivity and Amplitude Modulation Depth.

I made a RAM extension for my DX7, this was quite simple, because the
DX7 has two 6116-type RAMs dedicated only for the Internal Voices. And
they are in sockets!
Another mod is to replace the PROMs in the Voice Cartridges with
(bigger) EPROMs filled with your favourites. The data format is just the
VMEM format (4kBytes for 32 Voices) which is used in DX7 Sysex dumps
also (minus header and checksum).
