Easiest are thyratrons. You probably have common
pentodes and dual triodes. The pentodes can be used
easily to make VCFs and VCAs.
You can get 2D21 or 5696 thyratrons from www.tubesandmore.com
for about $2.50 apiece.
VCOs were rarely made in the tube era, and then usually
were based on a thyratron relaxation oscillator (as in my VCOs)
or on an optocoupler.

Not really, the 6X8 was intended for use as a frequency
divider (i.e. flip-flop). Was so used in Lowreys and in
the infamous Cordovox electronic accordion. The latter
used 82 of them, in 2 auxiliary cabinets....
