Wall Wart Power

Its come to my attention that some of you out there are using Wall Wart's to power your modules and other projects.  I was wondering if there where any precautions one should take if doing this.  Also I came upon one today that had a variety of voltages and was 300mA.  Would that be enough for a pcb project like a Master touch clone or something of that effect?  Also would I need a fuse?  And how would I figure out how big of one?
