Or just a built-in timer? I once made a resistance-to-digital converter
using a monoflop (CMOS 555). Processor triggers monoflop and measures
pulse width. Works nice, and is very cheap.

With the 555, a CV input is perhaps possible too. Feed the CV into the
resistor that charges the cap. But I haven't tried that.
