So Tony,  What did you use for your aftertouch sensor?  I only ask
because I ran into some stuff while looking for material for a ribbon
controller called Force Sensing Resistors.  Now, I know that is nothing
new or exciting, but this particular manufacturer makes a size that is
1/2 inch wide and 24 inches long.  That seemed to scream aftertouch
sensing on a keyboard to me.  Of course, it senses pressure and not
position, so it was not the "ribbon" material I had hoped it would be.

what I did like about this one I saw was that multiple pressure points
had the effect of parallel resistances being added, so you could further
change the resistance by pressing down another spot on the surface.
