I would say that velocity is nice for finger by fingers effects, each notes can be played differently.
But aftertouch or modulation is rather more for general stuff after that it's just like wondering what's the best
beetwen the typical limited Roland bender, the sturdy yamaha style pitch+mod wheels or the flimsy Korg joystick !!

As you said who cares ?
