[sdiy] God! Do I need a simple latch switch!

You could use a CMOS 4001 to build a simple RS flip-flop and have one
pushbutton for "on" and another for "off". The outputs of this circuit
could control a 4066 like you mentioned to switch your signals, or a
more sophisticated analog switch like the Maxim line of products.
