   JFET's are much harder to match than bipolar transistors. (that's
   why the JFET input opamps have looser Vos specs than similar
   bipolar input opamps). Matching discrete JFET's would be darn near
   impossible (unless you've got a hundred or so to work from).

Nah, it's easy.  I buy FETs in packs of 50 or 100 and match them by
hand all the time.  I have a number of audio circuits that wouldn't be
possible to build if I couldn't match FETs.

   And I'm not aware of any monolithic matched JFET pairs that are
   available (something like the CA3046 but with JFET's).

They're available, check the Siliconix (Philips, Vishay, whatever it
is now) catalog.

Matched P Channel JFET pairs are difficult to find.
