has exactly what you're looking for - a noise source with sample-and-hold. 
It's the 3rd to last circuit.

BTW, does anyone of any chips that consist of multiple 2N3819 FET's?

I want to make a noise source with some adjustability. I have made a
schematic which mostly plagerized from EFM and forest Mims. The idea is
to make a noise source for a sample and hold with ability to scale and
