ARGH, I hate that word... PIC, yuck..
If you want to do Midi get an AVR starter kit (35ukp from an Atmel
distributer)
you get software evaluation board and an 8515 which has onboard full duplex
UART, no bit banging needed.

Ive also done some Midi stuff, its much easy when you have an interupt
driven
UART :-)
Before a flame war starts, I have no problem with PICs..
I just like takeing the path of least resistance.. I speant 5 months looking
at
various micro controllers (scenix,AVR,PIC,COP8,etc) and went for the AVR
as it had UART on board, tonnes of flash space for code (8k) and the starter
kit
was cheap!
There is also some great webpages around for the AVR.
Not as many as the PIC but hey thats half the fun of it.
Also the Assembly language is easy to pick up, I also have 32 registers to
play with!
So please dont flame me, I just happen to love AVRs.
My monowave has 3 in (2 for osc's and 1 controlling it, LCD Midi, wave
selection, buttons and all)
I built a 4 channel Midi>CV convertor in the space of about 2 months from
receiving the starterkit.
Im now working on another bigger synth (more flexible routining/programming)
and it will have an AVR
controlling it all.
