I'm one of guilty of the above and am aware of the problem.

I tried and tried, but can find no option under Microsoft Exchange
to prevent this.

This wasn't a problem when I was using Netscape email client, at 
least you can enable word wrap so you don't have to scroll all the 
way to the right.

There is no alternative here where I work; MS Exchange is being 
force fed to me and the email server doesn't recognize NS email.

I wrote this message with manual CRLFs.

I love it when MS builds email that the rest of the world can't 
read :-|
