One place to start is here:

It is a list of common IC's and transistors that are used to build
electronic circuits.
Next, I would go here:
http://www.xavax.com/efm/
This is electronics for music, one of the biggest collection of
circuits I know of. Plus, Tom sells PCB's for some of them at a very
reasonable price.
As far as tube synths, well, you are just not going to find very
much. Solid state is much more suited to this than hollow state.
However, the apeal of building a tube synth is there if for no other
reason than it is a challenge. I hope I will someday have enough free
time to invest in my own endevor some day.
