I think I would use a duophonic keyboard circuit, like the Moog 952. I have
long intended to build such a keyboard myself, but never gotten around to it.
I do have the schematic if you need it.
A joystick is very useful. I myself have used the kind of joystick that is used
in RC equipment, these are very precise and easy to calibrate. They are also
available in a "throttle" configuration, where the Y axis is not spring loaded
but has many tiny notches, so that it stays in the position you put it. Could
be useful.
