What I would do is to use two good 75 Ohms coax cables. RG-59 or something.
Twisted pair is all very fine, but that weigths in at about 100 to 110 Ohms.
My educated guess is that the s-video signal is 75 Ohms signals, that is what
is commonly used in the buissness (I never had to care about it enougth to
know). With the distance you have you should be safe from any major damping
as long as you at least run the rigth impedances.
