Most EEPROMs are serial i/o devices.  This may (or may not) create some 
difficulties, depending on how many bits wide your samples are, and the 
sample rate that you choose.  The EEPROM may not be able to write the data 
fast enough to be used in real time (they have relatively slow write cycles, 
if I recall correctly).  You may also need a RAM buffer in which to 
temporarily store the incoming data, until the EEPROM is ready to accept it.

I believe there are some byte-wide, parallel i/o EEPROMs, but I don't know 
who makes them.
