What would kill CEM's?

I truely believe that the Curtis chips are more susceptible to damage
than the other LSI chips in the older synths. The negative rail may well
be more of a problem due to the need to current limit it due to the
internal zener. If you are running the CEMs on -5V, this should be
better; but my guess is that short duration overvoltage spikes on the
supply at start up and other times will damage the IC.

Certainly I have seen two 3310s die and two 3340s go rather odd in my
poly for no obvious reason.

And my own experience with op-amps in teaching electronics seems to
suggest that these little fellows can cope with pretty much anything you
throw at them. Even periodic PSU reversal... 'Sir, why is my circuit
smoking?'
